Ingredients:
1 green pepper
1 red pepper
1 cucumber, peeled
1 onion
1 T. mustard seed
1 c. Chico’s Gourmet Bloody Mary Mix
2 c. tomato juice [If you like it really spicy, add only one cup.]
2 T (or more) of apple cider vinegar, optional
Directions:
- Roughly chop the vegetables. [¼- to ½-inch pieces.]
- If you don't like cucumber seeds: After peeling the cucumber, cut it lengthwise, then use a spoon to remove the seeds. Then chop into ¼- to ½-pieces.
- Place all of the chopped vegetables in a large bowl.
- Add Chico's Bloody Mary Mix, tomato juice, and (optional) apple cider vinegar.
- Cover and refrigerate over night.
- Serve cold with salt and pepper, especially if you added the vinegar.
