Chico's Gourmet Bloody Mary Gazpacho Recipe

Ingredients:

1 green pepper

1 red pepper

1 cucumber, peeled

1 onion

1 T. mustard seed

1 c. Chico’s Gourmet Bloody Mary Mix

2 c. tomato juice [If you like it really spicy, add only one cup.]

2 T (or more) of apple cider vinegar, optional

Directions:

  1. Roughly chop the vegetables. [¼- to ½-inch pieces.]
  2. If you don't like cucumber seeds: After peeling the cucumber, cut it lengthwise, then use a spoon to remove the seeds. Then chop into ¼- to ½-pieces.
  3. Place all of the chopped vegetables in a large bowl.
  4. Add Chico's Bloody Mary Mix, tomato juice, and (optional) apple cider vinegar.
  5. Cover and refrigerate over night.
  6. Serve cold with salt and pepper, especially if you added the vinegar.
